I think the key term you’re missing there is “all stars”. There weren’t a regular college team. They were a team made up by some of the best CFB players around the country at every position.
Also the gap between NFL and college has grown substantially since then. NFL players have far far better training and conditioning. There’s a reason why almost rookies have struggles their first years in the league.

That was in the leather helmet days. I believe we can all agree the size and speed of the game has changed significantly since the 50s and 60s.

The last game that a college all star team won was in 1963. The NFL teams won out after that game up until they quit playing, according to Wiki. Football’s changed a lot since 63.

That 2011 Bama team is overrated. Never played a single really good offense. Outside of Arkansas, every team they played was awful on offense so of course they stomped them.
And comparing offensive numbers is not fair either. Offenses have changed rapidly since then. In 2001 there were only 12 teams in the country that averaged more then 450 yards per game. While in 2011 there were 22. In 2016 there were 36.
But that Miami is overrated because they were considered the GOAT till after a bunch of their players got drafted.

They still went 0 of 12 on 3rd downs at a point during the game. In the 2 drives inside Clemson territory after the defense forced TOs, they had negative yards on one drive and punted on the other. They deserve far more blame for that loss the the defense.

But, the D did enough to win the game. It was the offense that failed them and kept putting them back out on the field. One more first down in the second half likely beats Clemson.
But, spilt milk and all... they managed to overcome it.
