Its my opinion that meat should be served with sauce on the side. Any BBQ that has sauce mixed with it is considered "crock pot Q" in my family. Also, Ribs should be served with a dry rub instead of sauce IMO. If they do have sauce it should be a light glaze painted on about an hour before taking off the smoker.
Like I've said before, I like a good brisket but the region of the country I was raised in(Little Rock/Memphis)is dominated by pork.
BBQ is a passionate subject to a lot of folks in the south and Texas is no different.

Soul Man's BBQ. They do memphis style for the most part.
ETA: Been a long time since I've done anything other than drive through N. Texas to catch a flight or zoom to Austin so Soul Man's is likely long gone. No ketchup in their sauce

In dallas there is really only a few places that are worth note. South of dallas is plenty of badass BBQ. We have 1 great place in college station (fargos). Hill Country bbq, houston, llano, lockhart, lulling, and a few others I can't think of off hand.
And.. go away troll.. don't you have some big12 circle jerk to go to?

For those on here who believe the OP is a sip, I would bet the bank he is an WVU fan. He has spread all sorts of rumors about FSU and Clemson to the Big12, all of which, of course, were totally false.
