Why do you find it so funny that LSU fans are excited about what we saw on the field Saturday night, especially compared to what we’ve seen the last few years? It’s just a little strange to me. Other fanbases can get excited about an opening-day win without being told to temper their enthusiasm, but somehow LSU fans are expected to do just that. I honestly don’t understand why..

Yes, they are number 23 in the coach's poll.
But no one is ranking a team 26th in the AP poll. The reason why it's foolish to call them 26th is that no one who actually has a ballot ranked a team 26th on their ballot.
If this was a top 30, they would have a top 26. But you can't assume that Clemson would be no. 26 then. Why? Let's take one voter like Rece Davis and say he doesn't have Clemson in his top 25, so he never had them on his ballot. If he has top 30, he may still not have them on his ballot. Indeed everyone who didn't have them in their top 25 may not have them in their top 30 also. And if that's true (which we don't know) then Clemson may not be 26 as some other teams may be named on all top 30 ballots that were only placed on a very few top 25 ballots.
This is the same thing that happens when people say "My FG kicker missed a FG in the first quarter and we lost by two. If he had made that we would have won the game." It's impossible to really know that because once your FG kicker makes that kick it will change the game situation. You will then kickoff instead of just handing the ball over to the other team at the spot where you kicked. Maybe the opposition would've returned the kickoff for a TD. Maybe different decisions are made by coaching staffs that affect the outcome of the game.
Both changes could very well also change the outcome or not. We don't know.
