The money isn't in insurance defense anymore. It's a sweatshop.
I did what you are thinking about doing, but it was at the dawn of tort reform. Things were still good, but 3 years later it sucked.

The starting salary would not be as high as I would like, but I enjoy litigation.
At least what I've seen of it thus far.
I've been on both sides of the bar, and I enjoy defense more.
I mean, there's no way I can actually hit 2,250 billable hours in a year, right?

Go work at a DA's office for a couple of years. Learn to pick a jury and try a case (although criminal-it teaches the basics of trying cases and cross examination).

Yes, you can... and it's not fun.
Also, if you want to jump right out into the firm thing, think about taking the Texas bar and going to Dallas. It has a booming legal scene, a large Ole Miss alumni network, and great salaries starting out. And if you are dead set on an insurance/corporate firm, etc., go clerk for a judge for a year. Then you can hand-pick a firm from the offers given you.
Just my $0.02 from having seen and experienced.

I'm not dead set on anything.
I'm currently working for a Plaintiff's firm in New Orleans (mostly contractual stuff) and enjoy it, although I don't see them offering an associate's position unless a partner retires.
I thought about the DA's office here in Orleans Parish and externed there for a semester, but it is a hive of discombobulation. It isn't organized by any stretch, but I'd get a lot of face time in court.
