I like all recommendations, but chicken strips a guyere? (French Cheese) is a bit outside of my tastes for breakfast.

weekends:
Herbed and crusted over veggie hash brown's, using pre-baked (leftover) potato, broccoli, cauliflower, mushroom, zucchini, carrots, onion, ham, sausage, etc... several of whatever is at hand all fried up in olive oil and topped with a couple over easy (real runny) eggs. The runnier the better and whole platter sized. (no tott's allowed) plus a couple blueberry buckwheat pancakes with real maple syrup. and copious amounts of anything hot and black. (half/half only on Saturdays)
weekdays:
a couple (7:40 minute / cold water stopped) boiled eggs, liberally dusted with a turmeric, curry, salt and pepper mix. Boil'em up 6 or 8 at a time any old night and your ready in morning for several days (reheat 15-17 secs in a microwave)
special days:
nix pancakes and do Kings Hawaiian (vanilla bean) french toast, dusted with confectionery sugar, and homemade fruit compote enhanced w/liquor of choice (sweet pear anise is great) - baked cheese grits - and good Italian sausage.
