What is your favorite catfish?
What is the best way you like it prepared?
Do you catch it or buy it in a store



On a related note, Yankee catfish may be huge but taste bad
Asian (Chinese catfish) should not be eaten, EVER!

Old packages said China but now they have West Coast addresses. Sneaky bastards those Commie Chinese.

I like a nice meaty channel-cat filet, flash fried in really HOT (fresh) peanut oil with a Panko Crumb/Corn Meal mixture breading, crispy outside…still soft & flakey inside…served steaming hot, slathered in Crystal sauce…and a cold Budweiser, or two…or ten…to wash it down with.

Some friends I knew from China demonstrated this was the God's honest truth. That don't have an r sound in their day to day language.

In terms of catfish, I do know that up North if you are along the Mississippi river you do serve up catfish during the big fish fry events they love... but they vastly prefer just about any other type of fish. I've had some Northern Catfish in my time and it isn't as good as the Southern variation.

To answer the original question, Red River catfish is some of the tastiest I’ve had.

Blue catfish - I catch them off our camp pier and bleed the fish right away which helps make beautiful clean fillets. We dip them in our own seasoned mustard dredge and cover in corn meal. Drop the fillets in 350 degree peanut oil and serve with jalapeno hush puppies & coleslaw. Doesn't get any better than that!

I am closer to 50 now than 40...divorced and swore I would never re-marry. But that girl own me and everything I would ever have. That is my brand of poison right there. Perfect....if I could talk her into putting on red wig once in a while just as a change up!
