One thing I don't understand is the calorie deficiet. Say I'm eating 1600 calories a day. According to the deficiet program you need to burn 500 more calories than you consume. According to this, I would have to burn 2100 a day for a net of 500 everyday to burn 3500 in a week which is equivalent to one lb of fat. I just don't see how it's possble to burn that many calories in a 1 hour workout (the time I have allocated)
Calculate your BMR(Basal Metabolic Rate), then estimate your activity level and multiply your BMR by your activity constant(the Harris Benedict Equation). That would be your maintenance energy usage. The rule of thumb is to add/subtract roughly 500 calories from that amount to +/- a lb a week.
Oh look, an online calculator that does this all for you.

Hey BobLeeDagger, congrats on starting back getting fit!
First thing I would say is that you're definitely eating too little. 1200 a day is not enough for any male, and on the low side for females. Ramp up to at least 1600.
Second, you should try adding in weight lifting of some kinds. If you are just dieting and running, you will lose weight, but you will still end up being skinny fat. It's impossible to spot reduce fat, but it is definitely possible to change the overall composition of your body.
Third is you should check out doing some HIIT instead of just steady state cardio. It burns more calories, requires less time, and is a great way to mix up th monotony.
If you have any diet or exercise questions feel free to ask away!

Thanks for the input. I'm averaging around 25,000 steps a day. As of the past couple of days, I've added in bicep curls, lat pulldowns, leg extensions, 4 dumbell exercises, and varied amount of time on the treadmill and elliptical.

If you've never lifted and stuck to a consistent workout program, get the book Body For Life by Bill Phillips. It got me into working out 15 years ago. It outlines a great diet plan and workout plan, plus it also demonstrates exercises. Very very good and motivational book for a beginner.

Do any of you guys do any low-level hiking? Obviously I'm not talking Everest here, but we have some hiking routes in the area that range from easy to strenuous and I'd like to start working towards some of the tougher trails for fall. Any suggestions on shoes and other gear?

I'm lucky because there's several trials here within city limits between Cherokee Park, EP Tom Sawyer, and Jefferson Memorial Forest so that's where I plan to start. They're all within a 20-30 minute drive from my place and I wanted some options in case I wanted to take a short hike during the week after work.
Sarge, no AT for me until I have many miles under my belt. I would like to hike a portion of it at some point though.

When you have some time and have gotten your feet wet, Chattanooga to Knoxville (obviously) has some of the best hiking in the south. Chatt area is a great start, as it's challenging, but the loops are generally reasonable.
Savage Day loop is pretty easy and it's beautiful. I've done Big Creek Gulf Trail as well and I'd imagine it's pretty tough if you try to do it in a day. I did the overnight, per their suggestion.
Idk where you're at in KY, but this is probably a haul for you so I'd suggest backcountry camping.

That's about a 4 1/2 hour drive for me. I'm in Louisville (North Central, literally right across the river from Indiana).
I'd definitely like to branch out once I get some hikes under my belt. I guess I'm drawn to it because just running a loop or getting on a treadmill bores the hell out of me.
