No one is saying she isn't hot. We're saying we see chicks with nicer bodies every single day IRL. And most of them aren't swim suit models (at least I'm pretty sure). Now, I can see if you're a tit man how you could overlook her shortcomings (which is basically everything except her tits), but that's all you're doing is overlooking.

Kate Upton has the body of a 31 year old mom of two that takes care of herself. But she's a 19 year old swim suit model. Not good. She has zero muscle and a little too much fat. Broad shoulders, wide waist, no hips. I agree she has the "x factor", sex appeal and huge tits, but if you look at it objectively her body is not good. At all.
I am an arse and leg man and prefer a toned stomach, so Kate Upton is pretty much the opposite of the body type I prefer.
