My ongoing Ole Miss question will forever be: Why is it Ole Miss, rather than Ol’ Miss?
When you remove a letter or shorten a word, rules of grammar dictate that you replace the letter with an apostrophe.
At present, their name is either Old English (“Ye Ole Shoppe”) or a cry at a bullfight (“Olé!”).

Ole Miss was the name of their yearbook in 1896.
The term Ole Miss was what a slave used to refer to a plantation owners wife.
I googled.
