I read us and Florida are the only 2 teams to choose the daytime slot over the 7pm time slot. Anyone know the reasoning for this?

It's not a choice, the NCAA schedules the games.

They give the host the choice of playing first or second on friday.
DVH chose the 1st game.
I like it. You don't have to sit around as ling and wait and you don't have to wait for a game that gets delayed or goes into late innings.

Florida, Arkansas and Texas Tech.
I know Mainieri tends to do it when LSU hosts and started doing it around 2013.

As a host you can decide only when the first game starts and after that it’s all dependent upon other circumstances.
