I just take the dry ones off early (wrap in foil) and sauce the wet one and let the temp rise a good bit to get the wet ones to the degree of pretty. I had kids that lived in SC and NC and I had good BBQ in both but prefer what I am used to here (no yellow bbq sauce and less of the vinegar in NC).
