Dry rub w/ vinegar sauce on the side for dipping is the way to go in SC.

Scott's Bar-B-Que in Hemingway, SC wins the BBQ Final Four going away. Open pit, whole hog BBQ cooked low and slow. Vinegar and pepper based sauce is the real deal. It's simple, well executed, and damn good BBQ and unless they started selling hot dogs, you won't find any mustard there.
