Give me your favorite restaurant in town and I'll go tonight to one of the suggestions.
- must be locally owned - no chains
- No ethnic foods this trip - I'm no against Thai it's just that I'm not in the mood for it.
- Seafood or BBQ are in play for sure
- World's best hamburger joint - let's see if you are right

-Seafood:
1.) Blue Marlin in the Vista. Really good seafood, the Mahi Orleans is damn good and their shrimp and grits are top notch (made with Adluh grits, locally milled).
2.)Oyster Bar, also in the Vista. If you want oysters, crab legs, etc, then this is the place to go. Some folks like Pearlz (based out of Charleston), but I've always been partial to OBC.
-BBQ:
1.)Hite's BBQ- It's out in West Columbia, but it's damn worth the drive. Might be the best true bbq in SC.
2.)Southern Belly in 5 Pts- Pulled pork sandwiches, and it's really, really good. They probably have my favorite BBQ sandwich, The Django, which has jalapenos and spicy BBQ sauce.
3.)Palmetto Pig- If you're looking for a bbq buffet downtown, then this is probably the best.
-Burgers:
1.)Henry's- A lot of folks will say Rockaway's, which is kind of a Columbia institution, but Henry's Signature burger is perfection, if you ask me.
2.)Rockaway's- They do have damn good burgers here (George W Bush went here when he'd visit Columbia), but the service is fricking horrible.
3.)Burger Tavern 77- I normally go with the build your own burger and you can get creative and build a delicious masterpiece. I'd probably put this 2nd, but I feel like most Columbians would disagree with me.
Edit: A few other of my favorites-
1.)Thirsty Fellow- Good pizza, great salmon salad, and cheap draughts.
2.)Michael's- On Main St. You can find almost anything on the menu, but their breakfast/brunch is fricking awesome. They also have a blueberry mimosa that is the tits.
3.)Cantina 76- 2 locations (one on Main St, one on Devine St next to Henry's). Good tacos (stuff like BBQ, Fish, shrimp, fried chicken, etc) and a good chimichanga.
I'll include it because everyone jizzes their pants over it, but I find it overpriced:
The War Mouth off of North Main. I go there for cocktails since it's right around the corner from my house, and everyone loves the food but I find it ridiculously priced. $16 for chicken bog? Mother fricker, for $16 I can make enough chicken bog to feed me and 30 of my closest friends.

Good list except for Burger Tavern. That place sucks imo

To be fair, I've only been a few times. Twice I just built my own and I thought it was damn good... a bit overcooked (I like my red meat to basically just be seared on the outside and still cool in the middle), but otherwise solid. Not a fan of the burgers on the menu.
95% of the time I want a burger then I go to Henry's.

Oak Table has the best view in Columbia, if you're sitting at the bar. It looks right out onto the state house.
There's a (relatively) new restaurant on Gervais called Sea & Salt. It's owned by the same folks who own Nonnah's, but the chef there is fantastic. Best cheese board I've seen in Columbia and they have a cool deal where the chef will come out and talk to you about your tastes and then come up with a custom 3-course meal for your table (it's around $70/person, wine not included). The regular menu is great, too.
Bourbon, on Main St, has a great selection of, you guessed it, bourbon.
