Re "caint hep it".
Several years ago I was visiting my folks in El Campo. Long-time family friend stopped by for coffee, and the conversation turned to a local golf buddy (ca 75 yrs old) who was famous for throwing ti-tay tantrums on the course. Story was told about the time the dude missed a 3-footer on 18, then proceeded to walk off the green and launch his entire body into a ligustrum bush.
My Mom (exasperated): "Why does he DO that?"
Family Friend (stone cold serious): "He caint HEP IT!!!"

Favorite "caint hep it story" was from a local Texas politician I won't namedrop here because he's an old friend. He was talking about this situation involving some family friends in his small, rural home town. I'd stopped by his office after the parents of one of his old classmates came in for some bidness stuff, and I while they were there they shared the good news that their son had passed his AIDS test, which of course mortified us because it wasn't any of our business.
Later, I asked the the guy - who is a very sincere religious conservative - what it was like finding out his old school friend was gay. Direct quote: "Oh he cain't hep it, that's just the way he is. That boy was running around the house in his mama's dresses when we was six years old."
