If dinner is just with the MIL and FIL, and the MIL is in your corner, I would go. Positive vibes are on your side.
You're going to end up spending a lot of time at her house anyway, and there's a decent chance you'll have to see this guy frequently over the next 30 years.
If he's racist and it doesn't work, just leave, but remember, he's probably only asking for this meeting because it's his daughter, and he loves her too.

My son-in-law is black. I am from Alabama. I understand where you are and how you feel.
Meet where he wants to meet. Don't assume the worst. Be respectful but don't grovel. See where it goes.
