You don't think that observing a religion within government would be respecting an establishment of religion?

No I do not as the US is based in Christian law and within Christianity there are many sects.

If you look at most religions other than the mythology and what modern persons consider pagan, most religions are the same. The stories and symbolism is the same. Just names and places change.
