Truth is, A&M is LSU's biggest rival whether they acknowledge it or not.
The way to get to the root is to ask "losing to which team would be most likely to cause you to want to get blind drunk and run naked onto an Interstate highway..."
Ole Miss and Arky are right there too...because of the amount of deep-hurt BS the LSU fans have to absorb after a loss to those teams.
Deep down, LSU fans EXPECT to lose to Alabama and they respect both Auburn and Florida.. so not much angst about losing to them, hence rivalry status denied.

No, they're really not by any typical definition of the word. I do agree with the statement about which I would hate to lose to, however, for the same reason you stated regarding Ole Miss/ Arky. I personally don't take either of those for granted the way I do the A&M game though.
I don't EXPECT LSU to lose to BAMA, but am certainly not surprised by it. Most of BAMA's recent streak over LSU has been MUCH more competitive than LSU's over A&M. Honestly, if it weren't for this board, I wouldn't feel much different about A&M than Vandy or State.
