Because we sell out the big games in good years but not in bad. And we rarely sell out a lesser game.
Attendance is down NCAA wide. A lot of people are starting to enjoy the TV experience more than the live experience (why? I don't know). So expanding seating by a significant amount doesn't look like it will happen. Things could change though if Malzahn goes on a run of championships.

I posted a graph here some time ago with our attendance numbers over the past 10 seasons. If you go buy percentage of games sold out then there's no evidence at all to expand.. Much less expand to 100,000 which a bowl around the north endzone would provide.

Because as much as I love to go to Auburn games(I still make it a few each year), watching the game on an HD flatscreen as well as being able to watch multiple games throughout the day, all while being steps from my kitchen and bathroom, is really hard to beat.
I also have a toddler and will have another soon, so that makes it that much harder, not to mention getting back to Atlanta at like 3 in the morning after night games, because I'd rather just drive all the way back than get an overpriced shitty hotel 30 miles away.
Don't get me wrong, the experience in Jordan-Hare still makes the hairs on the back of my neck stand up, but the cost and convenience of staying at home has started to outweigh that.
