Your red beans need a ham hock or some sort of salted pork with a bone to simmer with it. Homemade chicken stock is also a must.

Brown up the sausage and cook your trinity in the drippings. Add some minced garlic about two minutes at the end. Then it's just stock, ham hock, bayleaf, thyme, salt and pepper to tase. Then some time.

Tasty as frick.
