Both ... grits on the side in a bowl, and the hash-browns scattered-covered-smothered-chunked-diced-peppered-capped and topped ... or, you could just do it the yankee way and say "all the way." If you want gravy on them say "Southern country too please maim," and they'll put some sausage biscuit gravy on top.
After that you order your waffle and steak.

Armed with this new information (not the egg advice--that makes sense), I feel like scrooster is a big boy.
