Cormac McCarthy, Quentin Tarantino, even Kurt Vonnegut (he was a student at UT and mentions the Vols in his first book). KnoxVegas can actually claim a lot of folks.

Wait, Prof--didn't Vonnegut go to Cornell? I just assumed he was there for his entire college career, given that he was the pledge educator in a buddy's frat.
