Seafood was on the smoker menu for tonight. Started off with smoked jumbo shrimp with Old Bay seasoning as the secret ingredient.
Next, it was the "Famous Jameis" dish consisting of a combination of Alaskan king crab legs and snow crab legs. You don't have to smoke them long as they are already cooked and you have to be careful not to dry them out. Better with butter, of course.
And finally there was corn on the cob rubbed with olive oil and then bacon-wrapped in foil for about 1 1/2 hours. The bacon and foil were then removed and it was smoked on the open grill for another 1/2 hour.
225F is the preferred temp for these types of food items.

Damn man....that's some serious prep for a few ears of corn. I grilled mine with Terragon butter and thought I was doing something.

The thing you have to watch for is that most recipes I have seen call for grilling the corn wrapped in bacon as opposed to simply smoking the corn and whatever method is used the key is you have to make sure you get the bacon hot enough to cause the bacon grease to saturate the corn. You can leave the bacon on throughout the cooking process but you have to cook it long enough for it to be done which means you either have to expose it to higher heat or pre cook it prior to wrapping it around the corn.

Smoked 5 butts and 50 leg quarters Saturday for my buddies sons high school graduation party. Grilled burgers yesterday. Low country boil and homemade ice cream today.

Had to fricking work the past 2 days but am taking advantage of today. Been at the pool for an hour now downing some tall boy millers and taking in the view.
