I'll give it a start:
Men
Emmitt Smith (football) - this is probably the hardest, but he is the NFL's all time leading rusher, an NFL MVP and hall of famer with 3 Super Bowl Rings
Ryan Lochte (swimmer) - 4 Golds, 2 Silver, 3 Bronze medals in 2008 and 2012 Olympics; 2 time NCAA swimmer of the year; 7 time NCAA champion; 7 time SEC champion; 24 time All American
Brad Wilkerson - 3 time 1st Team All American, led UF to 2 CWS; became first player in NCAA history to hit 20 home runs, steal 20 bases, and win 10 games as a pitcher in a single season; UF leader in batting average, slugging percentage, walks and on base percentage; during MLB career, hit for the cycle 2 times

Women
Dara Torres (swimmer) - 12 Olympic medals [4 Gold, 4 Silver, 4 Bronze]; 9 SEC championships, 3 NCAA championships and 28 All American honors
Abby Wambach (soccer) - highest all time goal scorer in US team history and holds the international record for goals for both men and women; 2 time Olympic gold medalist; led UF to first women's soccer title
