This is literally what "higher ceiling" means. Bigger body, bigger arm? Higher ceiling.
But most guys never come close to their ceiling. Coker is a low risk high reward situation. It won't really change anything if he starts, or if Sims starts, because if either is chosen to start by the duo of Nick Saban and Lane Kiffin, it means something about how good they are.

Because I think he is a bad QB. He's an athlete that we just stuck back there because we were short on numbers. I really hope he doesn't play because it would mean we will be wasting a year with great receivers.

Sims isn't really any better. While Coker has crazy footwork, at least he looks confident. Sims looks scared out of his mind. I like Sims and hope he can prove himself, but right now his tape isn't where I'd look for optimism either. Neither is a proven commodity, the best we can hope for is an intense battle that pushes both of them.
