How does Kirby Smart not have a HC gig somewhere, yet? Is he an idiot savant solving defensive schemes like Rainman counting toothpicks, but otherwise thoroughly useless and incapable?

He is well paid at Bama and seems to be waiting on the "right" job to come along.

Like previously stated he is waiting on the right job. He is doing the exact same thing that Bob Stoops did when he was at FSU. He turned down multiple jobs because he knew he could and his stock only got higher and look where that landed him.
