Does SC have a good backup who can tote the rock? And what was his average carries per game before he was hurt last year?
No, USC has several good backs behind Lattimore. Kenny Miles (RS Senior who was the starter the year before Lattimore arrived) and Brandon Wilds (Sophomore) have multiple 100 yard games already. Mike Davis is a highly touted Freshman who is getting praised as too good to RS (even though ,with the depth, he should be). Then there's Shon Carson (RS Freshman) who was second behind Lattimore on the depth chart at the start of last year before going down with his own injury.
As far as Lattimore's caries for this year, there is only one person who is going to be able to answer that question, and that's the man himself. We'll know rather early on next Thursday night whether the Lattimore we have is the same back he was. His playing style doesn't shy away from contact, so you will know just by watching.
I, personally, don't think that the NFL money is as much of a draw for Marcus as the competition. His drive and strength of character are something rare in this world. That's why it would not surprise me in the least, even if he comes back 110% of the back he was and puts up insane numbers, that #21 could return for his senior season if he feels that there is more that he could learn in the college ranks.

Lattimore only averaged 23 carries a game last year. The spurrier is running him into the ground argument is stupid. Richardson averaged 22 carries per game.

He's out for a while with a wrist injury.
