Down 17-8 instead of 17-7, if GT were to get another TD, you could keep it a 2 possession game at 24-8. You also could win the game with a TD and FG instead of tie if you can shut out GT the rest of the game. Alternatively, if you don't convert the 2 pointer, you go for 2 the next time to make up for it. Analytics would say you are highly likely to convert one of them.

You can always adjust your strategy later based on if you convert, but you can't go back and go for two if you find yourself down 17 again with only enough time for 2 possessions.
