I don't know about that but according to this source the SEC has winning record vs every other conference except, strangely enough, The Big East.

That’s right. The defunct Big East is the only conference with an all-time winning record against the SEC.

This website LINK seems to prove the poster's point that The Big 8 was mostly a 2 team conference.

eta I think the point is that winning 41 or however many in The Big 8 would have been much easier than winning in the SEC.
