Driving through the Commonwealth of Kentucky

Thank you for allowing me to post in the KY forum. This is not a sports related thread but looking for advice and suggestions for a drive through the state. I will also post in the Travel Forum.
I am in Pittsburgh, PA and told my wife that we should drive around KY before heading home to LA. She has never been to Kentucky (we are both widowed and now remarried. Both of us as old as dirt...lol). I have traveled many times to Lexington for football and baseball games and still consider Kentucky the best road trip in the SEC.
So, this is the plan, please tell me if we are wrong or please offer suggestions:
Covington - She wants to stay at the Pickle Factory Hotel. Unfortunately, there are no rooms available on Saturday, July 29th so we will visit The Rock and Roll HOF in Cleveland before driving down to Covington to stay one night on Sunday, July 30th. What are your thoughts on this hotel and things to see around Covington.
Louisville - Three things currently in our plans (Churchill Downs, Louisville Slugger Factory - need to pick up bats for the grandsons, and the Muhammad Ali Museum). Thinking about doing the walk on the pedestrian bridge to Indiana and also Frazier History Museum.
Bardstown - She picked this place and honestly, I do not know much about it except she said a German town and I can get sausage...laughing.
Mammoth Cave - I'm surprised by her selection of this site because she is claustrophobic. But, we will check it out.
Monticello - She said there were a number of water falls in this area to visit.
Corbin - Home of KFC and I have friends who practice at Baptist Health so gives me a chance to visit with them.
Lexington - We plan on visiting The Horse Farm and generally just driving around in the area to view the beautiful farms.
We will fly home from Lexington and expecting to spend 10 days on the drive. Again, any suggestions would be appreciated. TIA

If you're gonna go across the Ohio to Jeffersonville, and you like candy (red hots, choclate, etc), I recommend Schimpffs confectionary.
Its been there since 1891 and is worth a quick trip if you're in the area

60 miles east of Lexington is Natural Bridge State Resort park. Adjacent is the Red River Gorge area both worth seeing.
Cumberland Falls is west of Corbin on KY 90.
I think that is what you are thinking about.
