How do they get away with this?

Most schools only play one good team outside conference. UT played Pittsburgh. They also have Bama, Georgia and Florida.
The East sucks with 3 average teams, The west only has one bad team (Auburn).

Hence the offseason optimism. Add in that Pitts O was depleted, LSU is still figuring out who they are and what they do well and Kentucky’s history of finding a way to lose to the Vols and it’s apparent where the 9-3/10-2 talk is coming from.
No need to lie to ourselves about the schedule or any aspect of the team to make us feel better about it.

This is our easiest schedule in years and we still play Bama, UGA and a ranked OOC opponent on the road.

Well 4 if those games are mandatory as they are East Games. Meaning UGA and Kentucky plays those same exact teams.
