Spoke with the owners wife. Restaurant side is too much for him to handle. Moving meat market to the restaurant side. Someone else will then take over the old meat market side and operate another restaurant.

T Wayne's will make you forget about Gulf Net in a short amount of time. The guy knows his stuff and will provide a product of the highest quality that will not let you down. I have cooked with and against him in competition and can only say that he is one of the best, if not the best cook in this area. In my opinion, new ownership is an upgrade for this place.

For 5 pounds of sausage, you will need 2 pounds of rice, or about 4 1/2 cups of raw rice. Should come out just fine on the rice to meat ratio.

I am cooking in the contest today at 11:30. You can buy jambalaya from the festival booth. Cooks are not allowed to serve from the competition pots to the general public. Heck, they won't even let the public under the tent where the cooks are. After we turn in our sample box to the judges, the pot we cook is turned into the festival to be sold so you will be buying competition jambalaya. You just will not know who cooked it.
