Thickening Crawfish Etoufee for Arepas

Does anyone have a formula for how much to increase the roux ratio to thicken up etoufee for the purposes of stuffing arepas? Increase by 1/4, 1/3, 1/2? Or am i looking at it the wrong way, and need to decrease by some %?
I have a Venezuelan to handle the arepa component, so that part is under control... Just trying to avoid some trial and error. :cheers:

Assembled a thinline tele with a set up bootstrap pretzel pickups and a gunstreet 4-way harness and callaham bridge.
Essentially a Strat neck pickup with a hot tele bridge.
I was impressed enough with these $65 USA made pickups that I went ahead and picked up a set of each of his tele offerings and a set of his screwdriver p90s for a Les Paul special I’m trying to rejuvenate.
