I got one last year from my kids. Love it. Takes about 10 minutes per pound for a turkey. Prepare the turkey as you normally would. I inject mine, rub it down with oil, salt, pepper the outside. Put a big bunch of rosemary in the cavity. The bird sits upright in the basket which makes it easy to monitor the breast temperature. Take it out at 155 degrees. It'll coast up to 165. No hot oil to mess with. Skin does come out crispy, though not as crispy as oil frying.

We come in from Ocean Springs on Friday nights. One dish that seems to hold up well is that 7 layer taco dip. Frito Scoops hold a good mouthful. Veggie trays and ranch dip or french onion dips are good, too. Most likely somebody else will have something cooking on a grill.

I drive Highway 90 daily between Ocean Springs and Gulfport. The water is fine. The Least Terns are still happily nesting on the beach. I'm going fishing Saturday. See you there.

Another tip. My brother in law swears by cooking at 325 degrees instead of 350. Keep the 3 minutes per pound rule. I tried it and it worked. Less burning.

Don't cook it. Marinate it in a little sesame oil and soy or teriaki sauce. Slice thin or chop. Great with avocados. A little salt, pepper and olive oil.
