Slow-cooked Ham Day.

Usually just do this for Thanksgiving or Christmas, but have some guests this week, plus a couple of hams in the fridge, means .... Ham Day.



Recipe:

1 7-12 pound ham, fully cooked, not spiral sliced.
3 cups apple juice.
2 cups cut up fruit: apples, oranges, etc.

Glaze:
1 cup brown sugar
1 tsp black pepper
1/4 cup Bourbon
1/4 cup maple syrup
2 tbsp brown mustard

Set up Big Green Egg - preheat to 275
Add 3 chunks of smoking wood (I chose hickory for today)
Rub ham with glaze (save excess)
Put pan with juice and chopped fruit below ham
Cook uncovered for 2 hours
Lightly glaze ham one last time
Cover ham with foil and cook for another hour

Voila.
