Time to foil the butt...temp reading 160. Ribs look good.



Butt too...it’s already pulled back from the bone which is good. All of those juices and fat are what starts evaporating that causes the stall. I give up some bark in exchange for not waiting until 2 am for it to reach 200.



Foiled and spritzed ribs. Getting temp back settled for final stretch.



Ribs finished at 6 and butt? ???

Your'e right, and it's a gd shame.

True, while this technically is a "Riboff" and at its heart is about the meats, youv'e gotta give the judges some bravado. You have to eat sides along with the meat. You have to drink some american made beer to wash it down. You have to shoot something off in the distance, probably. I mean these may just be fringe categories but they could be what makes or breaks the RO3 champion and nobody seems to give a shite.

Update-

You don't need a grill umbrella when you have a pergola. Ridiculous. A damn umbrella on the grill.


Also pictured is an American beer.









I took them off, glazed them with the local wildflower honey.






Then I drizzled with Sweet Baby Ray's.











Then I tented and put them in the oven at 350 for a while to make them fall of the bone. I know this is heresy to rib connoisseurs. But I'm not cooking for those people.


I'm cooking for a 3 year old who has never had ribs he likes. He likes running around in a darth vader mask and candy.

So he gets candy ribs tonight.











Right now I'm cooking off some corn in the husk for tonight and a bunch of chicken breast for eating throughout the week.



I'm pondering whether or not to post a pic of a firearm. Probably not. This is a family kind of day.



ETA- I can't post dog pics because they both died.
