Yeah, my deer processing always adds a little beef fat. I guess that's standard for most processes isn't it? Deer is so lean it would probably crumble on the grill if you dad a little...
I'm not sure the ratio, I've never really asked to be honest and he's been processing deer for a looong time for us.

Not normal. I sympathize with your neighbors as they watch you walk to the mailbox holding a charred hotdog in one hand snacking away. Most likely whistling too. To get your bills because you wear straw hats, cook on a kettle, and can’t figure out auto pay

My son-in-law processes his own deer and doesn't add any fat. He gives me some ground venison for chili or cooking burgers. I buy some cheap sausage and mix about a half pound to 2 pounds of venison for burgers and chili. The fatty sausage holds the burger patties together.
