Porkstrami ribs came out amazing. Might be the only way I do them now.
They taste like a mix between smoked country ham and bacon.
Cure brined them with pink salt and spices for three days before smoking 6 hrs at 225°.

I want your take on this. A random thought came to me today on the road, as AC/DC came on the radio, song was "Have a Drink On Me", and I realized they are just a hard rock version of Creedence Clearwater Revival. After this epiphany, I'll never hear AC/DC the same way again.
