Oklahoma beat a decimated Florida team in the Cotton Bowl. Good win
Oklahoma State beat Miami in the Cheez-It Bowl
Iowa State beat unranked 4-3 Oregon in the Fiesta Bowl. Be reminded that Oregon was only there because the division champ, Washington, couldn't play in the Pac 12 title game due to COVID. They also finished behind Stanford in the division but won a weird COVID tie-breaker.
Texas beat 4-2 Colorado in the Alamo Bowl
West Virginia beat Army in the Liberty Bowl
So the Big 12 beat 2 Pac 12 teams (arguably the worst conference in the country), 1 SEC team, an ACC team, and an independant.
The SEC went 7-2 in Bowl games.
Georgia beat undefeated #8 Cincinnati in the Peach Bowl.
Alabama beat #4 Notre Dame in the ROSE Bowl (CFP) and undefeated #7 OSU in the CFP Title game
Florida lost to OU as already mentioned.
3-7 Mississippi State beat 6-2 Tulsa in the Armed Forces Bowl
Unraned Auburn lost to #14 Northwestern in the Citrus Bowl
4-6 Kentucky beat #23 8-3 NC State in the Gator Bowl
4-5 Ole Miss beat #11 6-1 Indiana in the Outback Bowl
To me, it looks like SEC teams beat a bunch of teams as underdogs while the Big 12 teams played as big favorites in 4 of their 5 bowl games.
A&M also beat UNC 41-27 in the Orange Bowl.

It's definitely not underachieving.
Name another team that has won the same or more in the same period of time. 6 AP/Coaches titles in 11 years. And more important... 6 titles won in a playoff situation.

I agree the Big 12 is not the weakest conference because the Pac 12 has fallen into the abyss, though it should be stronger with the programs and money they have. Seems like they just stopped caring though.
The ACC is very top heavy but I would argue is stronger than the Big 12 all around.
B1G is still #2 though the dropoff past OSU has gotten wider it seems, Penn State, Michigan, and Wisconsin won't stay down long though and they have several others capable of being very good quickly.
SEC is still miles ahead of them all.
The bigger trend though is the rich are getting richer and it is going to be harder and harder for smaller programs to compete with NIL and the facilities race. It just takes obscene amounts of money to get blue chips, especially if they aren't in your backyard and with SEC Country having the overwhelming edge on where the "Jimmies and Joe's" are it's going to get tougher. With Texas and OU moving that's really the death knell to the current system it's just going to take some time for it to finally happen formally.
