What is in them if you don't use the pre mixed stuff? How do you make them from scratch?

Just depends on the bartender/bar. I used:
2 Lime wedges
2 packets of sugar
couple mint leaves
(Muddle, aka, smash them together)
add 1 oz rum, fill with s/s mix & sprite.

I make them with a simple syrup, muddle the mint with lime, add to the syrup, add the rum, stir. Garnish with a slice of lime, and a piece of sugar cane if you have it.
