The Midwest was shaped by a large influx of German, Scandinavian, Polish, etc. immigrants. This wasn't the case in the South outside of Louisiana, which had virtually no immigrants. I think the biggest difference is the South has more of a shame culture, whereas the Midwest has more of guilt culture so the latter is more honest but also bland and docile. Missouri was divided between the parts which had lots of German and Northern settlers and the parts which had Southerners
