It is cheaper longterm to buy a roster than buy a new coaching staff. The knock-on effects of terminating a head coach is too dangerous in this era. Unless the staff is out-right malingering or incompetent, take that buy-out money and put it in a collective instead.

If Larry Coker, Gene Chizik, and Ed Orgeron could win national titles in the era before you could just openly buy a whole roster then what does that say about what kind of coach you need in the pay-for-play era?
Edit: no slight against those guys but they aren't really coaches that anyone could imagine winning a title outside the specific teams they coached the season they got their respective rings. When you have a stacked roster or a singular, game-changing talent then you can be just an average coach who is good at keeping the vibes right in the locker room.
