If you havent already, ask on the food and drink board, they will have plenty of good recipes. IMO start with a chicken and sausage as I find them less intimidating then dealing with a bunch of seafood.

I cook seafood all the time, is it different in a gumbo? I do shrimp boils once a month.

Seafood gumbo is a lot different. It is easier to overbook seafood in gumbo.

I've never tried it either, but I hate seafood... and pretty much any kind of fish except salmon.
