How far back do you think you would have to go for an average Power 5 team in today’s game to be better (not just capable of winning... but solidly better) than a national championship team of the past?

Would depend on rules being used. Some of these players are big and fast but never been hit with intent to kill them and that not be a penalty.

I would guess that ATM would dominate any team from the 80's due to speed, size and conditioning.

70's teams would be dominated by Temple.

60's teams by Division II

50's by the top high school teams in the nation.

I was too lazy to look up numbers for NCAA but here is the NFL Averages so they are probably slightly smaller in college.
Average NFL Linemen
80's 6'4" 272
70's 6'3" 255
60's 6'3" 251
50's 6'2" 234

in the 90s is when we saw the 300lb'ers

And coaching. I think today's game with all the RPO's, mobile QB's in the gun, etc., would be mind blowing for teams in an era when the wishbone was still being run by some elite programs.

Meh. Flawed hypothesis. Gosh we are so much bigger and stronger than those teams were!

Assume the same talent levels but those historic teams have access to modern nutrition and training.

Anyone out there really want to take on 1944 Army if they have players with modern training?

That would essentially be the same type of players from this era if they have access to the same training and nutrition.
