Since you have all this dining experience, please provide a list in order of places you would take someone to provide them a fine dining meal. The restaurants would have to be within 60 miles of Tuscaloosa (which would include Birmingham).. I will hold judgement of your palate until I see your list.

The only restaurant in Tuscaloosa that I would consider "fine dining" would be Kozy's. However, I haven't eaten a "fine dining" meal in Tuscaloosa since probably 2005. Great steak, great short rib. I don't know much in Birmingham because I don't and haven't ever lived in Birmingham. The only upscale restaurant I have eaten at recently in Birmingham is Highlands Grill, and it is very good (obviously).
Tuscaloosa doesn't have very many upscale, expensive, business attire only type restaurants. It is a town of 60,000 permanent residents, not many towns that size do, even really cool college towns with great scenes (Athens and Oxford come to mind). It does have quite a few smart casual type restaurants that are local and very good.

- DePalma's is solid Italian, very good for the price (which mattered when I was 22 in grad school)

- I've always thought Cypress Inn was very overrated
Of those places, if they were in Atlanta, I'd probably only say Archibald's and Kozy's would be places I'd pick on a Thursday/Friday night to go to for a night out. The rest wouldn't really resonate. But again, Atlanta is an international city with tons of great dining, so it is really isn't fair to compare.
And, like I said before, this is all based on 5-10 years ago for the most part. I generally don't spend long weekends in Tuscaloosa. I probably (definitely) know the food scene in Athens firsthand now better than I do Tuscaloosa.

It's funny, whenever I'm passing through Birmingham, I always stop at Saw's. All those options, yet I get BBQ.

DePalma's is more of an ambiance, value thing. It's food is good, but it isn't anything special. Five's southern special with mac n' cheese and chicken is really good.

Things I can do in Tuscaloosa on a day when the weather is permitting (so not today):
Go to one of four main lakes.
Go to the amphitheater if a band is playing.
Go to Druid City Music Hall and see a band there if there is not one at the amphitheater.
Go to one of many beer houses/breweries.
Go to the movie theater with 16 screens that also has an IMAX.
Go to wherever StandUp Tuscaloosa is for the night.
If I was a student and wanted to just kick it, chances are people in my students community living area are doing something.
Go to one of the many parks or recreational facilities.
Eat any many local restaurants. Which quite a few are fine dining, and two of them that I know of are farm to table.
In the winter, during the holidays, I can go ice skating when the opens up the rink.
I can go to one of many shopping areas to see if I want to splurge on something I probably don't need.
I can take a twenty minute drive south and check out Moundville and walk through the trails.
I can go to a variety atmospheres at any of the bars downtown or on The Strip.
I can check out where art form they have going on at The Bama Theatre.
If all else fails, I can take a 45 minute drive to Birmingham and see what is happening up there.

I use to fly into there about every couple of months and have lunch. Of course everyone wanted to go to Dreamlands , but I have tried most of those places. Not bad food, but I would go out of my way to eat there unless it was due to someone else's insistence.

Bottom line here is that Tuscaloosa offers excellent dining, great music venues (love the amphitheater), micro-brewery, several bars to choose from, and is a really fun place to live especially as a college student. There isn't a campus in the nation more fun than UA has been the last 7-8 years.

I don't do much heavy eating in Birmingham. Generally just stop there to drop the kids with the in-laws and head to Tuscaloosa.
Of the places I have been in town that I enjoyed :
- Highlands
- Fish Market
- Foodbar
- Urban Cookhouse (though really a lunch spot I guess)
