What is your current cheese melt?

Mozzarella and goat cheese at the moment here
Goat cheese has to be bought at an Arkansas grocer called "Harps" - if you're in Arkansas
Some type of hogie bread at Neighborhood Market that's 100 calories for an entire roll. cut in half
Oven toasted and then thrown together in a pan with olive oil, the two cheeses mashed in, and then everything doused generously with basil leaves until my arm falls off. Basil is good for you.
basil is sprinkled inside and out
pan melt it for however long and then eat the frick out of it

Made queso this weekend. All stores were sold out of queso blanco, so mixed velvetta with queso fresco and rotel tomatoes.
