You for sure want whole milk mozzarella then. Has more fat in it.

It tastes better. It's what pizza places use and that's why their cheese always seems to be more stringy than the skim milk versions you see mostly at grocery stores.

Just assumed everyone knew that, since that’s what the Italians use
All the best pizza places around here use it (or so they say) so I’m just gonna listen to them

I just know Lucali and Di Fara use Buffalo (along with 2 other cheeses)
Those are like 2 of the Holy Trinity

He has stores up in Oregon. His pizza is like what you would get at a chain pizza place, but better because it's not been all corporate out trying to get the most profit and shite. He's been very successful, opened up his first store about 9 years ago and now has 3 of them and adding more.

I doubt he uses Buffalo Mozzarella(he may), but he would most likely know the differences etc.
