I think you're on to something there.
The group who envisioned the minions took yellow and a few other colors to come up with characters that funny.

Remember, when Prozac came out, the top half was yellow and the bottom half was green with a yellow tint.
I could see an artist popping them on their dest at work and being "inspired" by the color and shape when designing the Minions.
