Oh I know what you meant

but I think it's fair to say the vast majority associate creole food with LA, not NYC

Is this true? I feel like BBQ's one of the hardest things to find wide-spread.

I'd rather have someone who grew up eating it and cooking creole and cajun food preparing it

my aunt from Kansas can look up a good cajun recipe but ti doesn't mean she can make it the same as someone else who grew up with it

I know a place in Nashville that has the best bbq i've ever had

that'll piss off some Memphis folk, but it's true

hell there's like 10 different cities claiming they have the ebst bbq

Nashville doesn't count. I mean like... can you find good BBQ in somewhere like Miami or Seattle?

Of course you can. Though it is such a waste for me to get cajun/creole anywhere else.

For me, it's about the numerous variations that make the Creole/Cajun down here special. The question of who makes the best poboy can devolve into a two hour conversation arguing subtle differences. That's what is awesome about it.

agree

I know I can get great Chicago style pizza in Nashville

but it will still never be the same as actual Chicago style pizza

Chicagoians are making it, and they grew up eating and making it

there are little nuances to cooking cajun/creole food that you only learn from your grandparents

What's the name of the place?

And this is one of my favorite places to eat here. I just wish it was closer.
