I'd rather have someone who grew up eating it and cooking creole and cajun food preparing it
my aunt from Kansas can look up a good cajun recipe but ti doesn't mean she can make it the same as someone else who grew up with it

I know a place in Nashville that has the best bbq i've ever had

For me, it's about the numerous variations that make the Creole/Cajun down here special. The question of who makes the best poboy can devolve into a two hour conversation arguing subtle differences. That's what is awesome about it.

I know I can get great Chicago style pizza in Nashville
but it will still never be the same as actual Chicago style pizza
Chicagoians are making it, and they grew up eating and making it
there are little nuances to cooking cajun/creole food that you only learn from your grandparents
