Got a Buck on Opening Day

In Texas, deer season (rifle) opens the first Saturday of November. Went out to the Piney Woods this past weekend and got my two feeders set up. Also got a new blind since my old one was falling apart. One feeder by that and another by a tree stand. Shot my rifle on Saturday. I'm pumped. Anyone else going hunting soon?

We leave our feeders up all year and keep them filled, but my father-in-law lives close enough to go by there every weekend or two. We planted green fields a few weeks ago and they're already pretty green. Going this weekend if the weather cooperates to clean up the shooting houses, trim trees around them, and other general maintenance.
Truthfully, I enjoy all the work to get ready for deer season than I do the actual deer season. Haven't killed any deer in a few years because I just didn't feel like shooting any. I do enjoy being out in the woods by myself with a good book though. Our rifle season opens the weekend before Thanksgiving.

I hunt on family land about 200 miles east of Dallas close to Toledo Bend. Family is from San Augustine, Texas. I typically go out on bye week or if I can get my cousin to join me we will go when the Aggies have a good game so we can watch together. Last year we did the Auburn game. Typically Auburn is on the first Saturday in November (last year it was in September) so it's become a tradition to go to San Augustine for it.
Always gives me some good time to think about life and the direction I'm heading.

Yeah, our place is family(wife's) land and is only about an hour from my house. 20 minutes for my father in law. He spends pretty much every weekend up there, so it's pretty nice compared to other hunting camps. Double-wide on a bluff, DirecTV with HD TV's in every room, huge deck with another HDTV out there, huge fire pit just off the deck, 2 smokers, 5 1/2 acre pond stocked with trophy bass, blah, blah, blah.
There's usually only 2-4 people up there hunting most weekends during the season, and there are many Saturday afternoons I'll skip hunting to stay and watch football or get supper ready.

Oh and going to a big fancy deer lease is? Please. This is family land were we've done all the work. We aren't paying someone else to do it for us.

My uncle brought his four wheeler and we drove it to his barn. Skinned it, got the limbs, the backstrap, and a few scraps here and there. We did not open it up all the way. Typically my family avoids the guts. Too much of a pain for such little meat. Just got back to the stand for round 2. Saw a big buck driving in. Hopefully he finds me.

The backstrap? I got it and will not be taking it to the processor. I'll filet it myself and probably chicken fry a good portion of it. The only thing we don't take are the sweetbreads.

The species of deer we have here in Alabama have the tenderloin on the inside of the abdominal cavity along the spine. Pretty much have to field dress them. It's worth the work though.

Not looking to argue, but you can get the inside loins by making about a 4 inch cut right behind the rib cage and pull them out that way. Everyone out west does it like this. I've done it both with the animal on the ground and you roll them over for the other side, and I've done it like that hanging.

However you do it you should definitely keep the tenderloin. You have to have something to put on the biscuits in the morning.

So the meat is along the spine, but I didn't need to cut into the guts. The torso remained intact while I was able to cut the meat out of the spine. That's the best part of the deer.
