Add spices/seasoning to charcoal before you light. I usually add lemon juice and a dry rub to the charcoal first.

Rosmary and thyme do well with charcoal too. I thought seasoning charcoal or wood was common practice?!?!?! Give meat a good fresh smoke smell and taste...
